HOW TO MAKE MOIN MOIN WITH LEAVES
  • 3 Milk cups of Beans
  • 4 Tablespoons ground crayfish
  • 3 Big Stock Cubes
  • ½ Handful of Habanero pepper or Atarodo
  • 2 Tatashe Peppers or Bell Peppers
  • 3 Big Onions
  • 20cl Vegetable oil
  • 50cl of warm water
  • Salt (to taste)
  • 4 Hard Boiled Eggs
  • 1 Big Mackrel Fish
  • Leaves


Moin moin Cooking Preparations
  1. Wash the beans with enough water to remove the coat. When the entire coat has been removed, place in a bowl and cover with water while you prepare the peppers.
  2. Cut the eggs and fish into small pieces and set aside.
  3. Wash the habanero & bell peppers. Cut the onions into pieces & grind the crayfish with a dry mill.
  4. Wash the leaves thoroughly and set aside.


Cooking Directions
  1. Blend the beans, peppers, onions, crayfish with some water and pour the mix into a big bowl.
  2. Add the vegetable oil
  3. Add the warm water and stir the mixture at the same time till you get a good mix of all the ingredients.
  4. Add salt to taste and stir.
  5. Add the sliced egg and fish and stir well.
  6. Pour some water at the base of a big pot like 1 inch.
  7. Set some moin moin  leaves in the pot to pad it before putting the wrapped moin moin.
  8. Fold the leaves and add the moin moi  mixture.
  9. Fold and arrange properly in the pot.
  10. Add as small quantity of water as possible as you cook to keep the padded leaves from burning.
  11. Cover the pot with some leaves to allow proper steaming in the pot as moin moin is cooked with steaming
  12. Cook on medium heat for 30 to 40 mins and your moin moin is ready.
Serve with Jollof Rice, Fried Rice or as desired. It also goes down well with Custard, Pap, Garri or Bread.

                          


HOW TO WRAP THE MOIN MOIN LEAF
 


Hold the leaf (a big one) in your hand




 Fold the right side in.




Bring the left side in over across the first side and turn it round.  A v-shaped funnel will be formed.
Hold it properly at the tail end and make  sure it’s well tucked in to avoid leakage.



Flip it to the back to make a click sound.


Open the leaf a little wide with your hand and scoop some moin moin pudding in the leaf. Enough for the leaf to cover.



Close it up and turn the leaf to the back. Put it in the pot and cover with some leaves to cook.
